Chai Latte Syrup Concentrate

2 1/4 cups water

8 bags of chai tea (play with the strength on this as this is a strong brew)

1/2 cup Gentle Sweet

1/8 tsp. xanthan gum

1-quart jar for storage with lid or other air tight container

Heat 2 1/4 cups of very hot water in a small saucepan. Pour 1 cup of the hot water into a container with the tea bags and steep 5 minutes..then remove the tea bags and squeeze them well. Now add in as much hot water as you need to make sure that your tea concentrate measures at least 2 cups.

To the container of warm tea add the sweetener and  1/8 tsp xanthan gum sprinkled lightly on top of the warm liquid and whisk well!

*Xanthan gum just firms up and binds the concentrate together do nothing separates but doesn't make it thick.

Pour the concentrate into a pint jar, cover and refrigerate until you're ready to make your Hot or Cold Chai Tea Lattes
