Cheesy Hot Dog Pie
Ingredients
Low Carb Cheese Dog Pie
- 1 cup almond flour
- 3/4 cup THM Baking Blend (if you're out try this recipe)
- 2 cup cheddar cheese, shredded (8 oz.)
- 2 jalapeños, finely diced (optional)OR instead of the cheddar and jalapeños just sub in Pepper Jack
- 1 tablespoon baking powder
- 1/2 tsp salt
- 4 large eggs
- 1/2 cup greek yogurt (0% or 2%)
- 1/4 cup melted butter
- 1/4 cup water
- 1 package of Hebrew National beef hot dogs
Preheat oven to 350°F. Grease a 9- x 13-inch glass baking dish.
In a large bowl toss together the cheese, flours, baking powder, and salt.
Add the wet ingredients to the dry, stirring until well combined
Pour the batter into the baking dish, spreading evenly.
Arrange the hot dogs on top of the casserole and they bake right in. I like to leave the tops showing so I'll know where to cut so each piece gets a piece of hot dog.
Bake for 20-25 minutes, until the edges are brown and the breading is fully set.
Allow to cool for a few minutes before cutting and serving.
Serve with diced onion and mustard plus a side of chili or
chili gravy.
