And yes, it’s another recipe using the THM Friendly Low Carb Biscuit Mix.
This recipe follows pretty close behind the low carb 3 Ingredient Waffles Using Low Carb Biscuit Mix but the recipes are completely different.

I made these “as is” at first and wow, what a satisfying Fuel Pull (low fat/low carb) meal those pancakes make!
It was the discovery of those pancakes this past summer that helped me “crack the FP pancake code” and make the type of pancakes I’d been wanting ever since starting this eating plan.
After making them the first time I knew it would be a regular occurrence so I immediately started replacing all of the dry ingredients (except the small amount of oat flour) with my FP version (no coconut oil added) biscuit mix.
After speaking with Tanya about it she graciously consented to me posting my version of these great little pancakes and I’m so glad to let you guys know about her THM Coaching Services and great little blog too (all linked above). 🙂 <3
I’m posting this single-serve recipe first (complete with a single-serve batch of the biscuit mix recipe) for those who have been hesitant to try the larger batch or haven’t tried it without the coconut oil yet.
Have no fear, if you’re like me and a lot of other cooks you’ll be double batching the large recipe in no time!

The following recipes works best with a natural sweetener called Gentle Sweet but be aware of the following when using it:
THM Gentle Sweet is so authentically sugary sweet because it contains xylitol and high-quality stevia.
BUT xylitol is dangerous to pets so if yours have access to your treats be sure and use the Xylitol Free Gentle Sweet (the taste and texture are not quite spot on but still a great product.

Easy Breezy Strawberry Syrup (Sauce) – FP is easy to make and any low carb berry can replace the strawberries if you’d prefer.

I’ve talked before about the need to “confine” these low carb breads to give them the look and feel that we’re used to seeing.
Forms like the ones in the following affiliate link are the key if you want them to rise better and be lighter and fluffier. They will still work without them but I love the results of using forms. The silicone will release better than the traditional metal but either can be used.

I warn you though, it’s so freeing to be able to make many on plan baked goods without dragging out all those dry ingredients; just scoop into a jar of biscuit mix, add your wet ingredients and bake!
Single Serve FP Low Carb Biscuit Mix to Try
Never tried this low carb biscuit mix and want to experiment? Here's a single serve version to try!
Ingredients
- 1/4 cup Trim Healthy Mama Baking Blend
- 1/2 tablespoon Pristine Whey Protein Powder - or other on plan protein powder
- 1 1/2 tsp aluminum free baking powder (I've used Rumsford for years and it works!)
- 1/8 tsp cream of tartar
- 1/2 tsp Gentle Sweet (or 1/4 tsp Pyure or Truvia)
- 1/8 tsp THM Mineral Salt or (Celtic sea salt or Real Salt)
Instructions
- Mix all the ingredients together.
- Store in a tightly covered jar until ready to use. It would be best to refrigerate it but I've left it out of the fridge for weeks at a time as long as the baking blend is fairly fresh and never had a problem with it going bad.
Notes
- I have upcoming recipe(s) that call for the biscuit mix without the coconut oil so the recipes can be FP (low carb/low fat) if desired for those on THM. In the case of these recipes I will include a smaller batch recipe (like this one) with them for those who want to try it that way before making a whole batch.
- I have begun to make this mix without the coconut oil and just add coconut oil into the recipes as I go so that I can be free to experiment with various recipes and it's working well.
- It's easier to mix initially without the processor and it's so easy to add the coconut oil (if needed) to the recipes with the other ingredients.

Good early morning! I woke up at 3 am thinking about your Mini Cinnabundts recipe! I was surprised and excited to see the new recipe for pancakes using your famous biscuit mix! They do not disappoint! So very tasty, fluffy, and amazing I might add! I’m still going to make the Cinnabundts for the grandchildren this morning! If I doubled the recipe and ate that all in one sitting what fuel with this be?

Hi Kari. You can double it but I just don’t see any way that you could eat two batches of this. This is a lot of very filling pancakes.

Hi. I’m usually use Brianas baking mix because it’s nut free. Would her mix work as sub in your biscuit mix?

Hi Nona. You might want to consult that blend recipe to see how it subs. My understanding is that her blend is 25% drier than THM’s. The one DIY one that I’ve linked to should sub perfectly though. So you might compare the two.

First of all I love your bisquick mix! I have made the biscuits with it a number of times. I decided to try your pancakes and they are THE best pancakes I have tried. They are light and fluffy and even taste good without any syrup or anything else on them. I do need to try your syrup as I used a store bought sugar free one and did not like it. My husband makes his syrup like yours only with sugar so I know I will like the sugar-free version! Thank you for your amazingly delicious recipes. You are one I can count on!
