Need a protein snack that’s yummy, prepped, and ready to mix in a flash? Lemon Bar in a Jar THM S Low Carb to the rescue!
This is another “best of” from our friend Tammy. She served it recently to some THMers in her area and it got great reviews and calls for the recipe. So she sent it over to me and I tested it also and got it declared a winner over here so now I’m so glad that she can share it with us here on the blog!

Summer is here in Texas and lemons are just so refreshing no matter how you slice ‘em. Lemon Bar in a Jar is just one more wonderful variation of Candy Bar in a Jar. It is make-ahead simple and grab and go ready! I hope you enjoy it as much as we do.”

- 1T coconut flour or 1T THM Baking Bend
- 1tsp baobab
- 2T whey
- 1/2T collagen
- 1T gentle sweet or a little less powdered Pyure
- 2-3 pinches mineral salt
- 1T butter, softened
- 1T MCT oil
- 1/4tsp lemon extract
- Juice from half a lemon (you can use water if that’s easier but you need extra liquid for the coconut flour and baobab fiber)
- Add the dry ingredients to a 6-8 oz jar with a tight-fitting lid.
- When ready to make it just add the oil, extract, and lemon juice.
- It forms a nice cookie dough type ball and can be eaten right away but when it sits up for a bit it gets even more lemony doughy at room temp. YUM!
- I added some granular Erythritol for that “sugary” coating, but it’s not required.
- *Note: we used the powdered Gentle Sweet on top.

Very nutritious, lemony flavored, super convenient, protein snack that you can enjoy without guilt.
Ingredients
- 1T coconut flour or 1T THM Baking Bend
- 1tsp baobab
- 2T whey
- 1/2T collagen
- 1T gentle sweet or a little less powdered Pyure
- 2-3 pinches mineral salt
- 1T butter or ghee softened
- 1T MCT oil
- 1/4tsp lemon extract

Could you use oat fiber instead of baobab?

Hi Davette! I checked with Tammy on this and she says that she’d use an equal amount of coconut flour for the baobab. Hope that helps and thanks for stopping by. 🙂
For Whey do you mean whey protein powder or the liquid whey?

I’m allergic to whey and also wheat/ yeast. Would coconut flour have
Any of these products? I’m not familiar with baobab fiber, is it found in health food stores? I have a ton of food allergies and am looking for ways to get protein . I love lemon, so I hope I can tweet this

Hi Sue! You won’t find any wheat or yeast in this recipe. There is whey powder since it’s a protein snack but although I haven’t tried it yet I feel sure that you will be able to replace the whey with egg protein powder.

Baobab is an amazing superfood with a citrusy flavor and can be found in WalMart and through mail order. Since it's from Africa and fairly new on the market I think most will find there system has not developed allergies to it but be sure check with your physician if you are concerned or have severe reactions to different types of foods.
I am allergic to collagen so am wondering if this & other candy bar in a jar recipes would turn out without it? Thanks!
You could sub in other unflavored protein powders but the collagen is a more concentrated protein source so you won’t have quite enough protein for a serving with all the regular protein powders that I’m aware of so you’ll need to compensate for that loss.
I sometimes make this recipe though by subbing 0% yogurt for all the oils in this lemon bar in a jar recipe. The yogurt contains enough protein to compensate so if you do that just switch out the collagen for whey protein and see what you think about that combination (it’s really a favorite of mine as it makes for a good low fat treat).

Do you know the measurement of lemon juice of 1/2 a lemon?
I always use the small or medium sized lemons not the huge ones but I really never measure. Sorry I can’t be of more help there.
I haven’t measured it Connie, I’m sorry. But if you’re using a medium lemon you should be fine.
Wow. This is an amazing recipe! Tastes just like a lemon bar! I am dairy free, so used 2 T collagen and 1/2 T coconut flour in place of the proteins. I also used 2 T coconut oil to replace the butter. DELICIOUS. Thank you!
