Here’s a recipe that I developed using my Enchilada Gravy. These enchiladas cook up in one skillet with no dipping and rolling or even baking necessary. I created it to make up for the extra step of cooking up the gravy. It is just one more easy step but still…I thought this might help you guys out because it did me! Enjoy!

I still odn’t understand about thm serving sizes, how many servings are in this enchilada dish?

Hi, Lynnita! The concern for serving sizes usually only pertains to certain categories of dishes. In the case of this one the low carb tortillas do have some carbs. Since these are frankenfood carbs THM would like you not to consume more than one large one (4 net carbs) in one meal or snack or more than 2 smaller ones (3 net carbs). Depending on which size you choose to use in the dish you can just figure out your serving based on the size tortillas you use. Otherwise, all the other ingredients in this dish, including the sauce do not have a set allowable limit. It is normally the FP and E meals where you get into the serving limits. I will go ahead and note this though when I get this post updated. 🙂

Oh, MY! I never thought to thicken a sauce with coconut flour. This is going into the bi-weekly rotation at my house. We have been buying the Mission low carb tortillas @ 4g net carbs and “Frankenfood” or not, they are pretty tasty at that carb count.
Thanks for another recipe that will be a family fave and keep the old folks with diabetes and heart disease around long enough to raise them.

Hi Darlene! You could try these masa wraps. I haven’t tested it with them but they are very good. Just as with the low carb tortillas the amounts must be limited and the amounts will be specified in the recipe. 🙂 Hope this helps. https://www.nanaslittlekitchen.com/masa-or-corn-flour-tortillas/
