I am a big fan of wonder wraps and once I found out that the masa (corn) flour was on plan I was so excited to see that Tisa Fournier (THM Admin) had tweaked the Wonder Wraps from the Trim Healthy Mama Cookbook Pg. 204 to make real Masa or Lime Soaked Corn Flour Tortillas.
If you haven’t tried the Wonder Wraps from the Cookbook I hope you get a chance to soon they will change your life, especially if you have problems with the store bought variety of wraps for any reason.
I asked her if she would mind if I posted it on this blog for easy reference. She graciously agreed so I am just relaying her info on the recipe and planning to use it in many new dishes to come!

Masa or Limed Corn Flour Tortillas
"Ok let's talk about LOW CARB TORTILLAS (AKA Masa Wonder Wraps ). I love tortillas and finally made them low carb with only 5g carbs for 4 wraps!!!!!? I got the original recipe for these from Trim Healthy Mama and made my tweak by using Masa in place of psyllium husk." ~ Tisa
Ingredients
6 egg whites
(Note from Tisa is that you can use equivalent in carton egg whites but leave out the water)
2 tablespoons water to thin as the batter will continue to thin as you cook the wraps
2 tablespoons Masa (10g carbs)
2 tablespoons Oat Fiber or Psyllium FLAKES
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 generous pinch of high mineral salt
cooking spray
Instructions
This makes 6 wraps so 3 of these are 5 grams of carbohydrates
Mix all the ingredients together till it is thin with no lumps. Spray an 8-inch pan and heat on the lowest setting. Then take the pan off the heat and add 3 tablespoons of mix and swirl till it covers the pan. Turn the heat up to 3 or medium and cook till done then flip and cook the other side. These taste like fresh corn tortillas and do not taste eggy.

- Very close to the same time as Tisa was working on these fantastic tortillas another blogging buddy of ours was publishing a sandwich wrap, also made with masa. - You will need to measure the batter for each tortilla so that the serving sizes are correct in order to make sure you can use these Masa or Corn Flour Tortillas (FP) in either an E or S setting. Yay!

Oh ‘Nana’! I just nmade two batches of these and they were easy and so good. I have made probably 6 different low carb tortilla recipes and this one is number 1 for ease/taste. Can’t wait to share with the largely Hispanic group I will be teaching in a class on alternative choices in a YMCA sponsored Weight Loss Solutions series. I am also going to experiment with some canned ‘baby corn’ mashed and added. ?

Sounds good Cheryl and I’m so glad you enjoyed these. The baby corn will change these to an E I’m thinking but corn is allowed in small amounts as I’m sure you know. Good luck with that class too Cheryl that’s exciting to be able to reach out to the Hispanic community with the all the great food choices that this diet includes. If you get a chance check out my low carb enchilada sauce, my husband grew up eating real Mexican food in the East End of Houston and he loves that sauce!

I am excited to try these. We live in Guatemala where “corn is life” ? And tortillas are eaten at every meal. There is no low carb anything around here. I would love to make a batch of these every weekend and have them during the week or even when we go out. Can you tell me the best way to save these. In the fridge on the cabinet? Thank you!

I would definitely save them in the fridge and if you don’t have a way to separate them I’m wondering if they might stick together? I get 4 small ones to one paper towel by wrapping and overlapping. Good luck and let me know how it goes! 🙂

Follow up: I have been freezing these for awhile now as I multiply the recipe by 2 or sometimes 3. Another great discovery was cutting each tortilla into wedges or strips and placing them on a micro-safe plate. I cook 1 tortilla for about 2 minutes and voila – microwaved corn chips for nachos or dipping!

They will crisp up but not like a true flour tortilla I’m afraid. At least not in my experience… I’ve heard varying reports. 🙂

I’m sorry Misty but the psyllium powder is much more absorbent than the flakes. I tried but couldn’t get it to work out.
