One of my favorite ways to use the flavors of cinnamon and spiced caramel is in a nice creamy latte like this Mock Cinnamon Dolce Latte THM S or FP.
Oh my, can’t you almost taste it now? Don’t wait another minute, go make this coffee drink as soon as you can, because it will not disappoint! I have enjoyed this drink for two months now as I have perfected the flavor blend.
The warmth of the spices combined with the refreshingly cold, creamy almond milk with a splash of cream is just what I have needed as a pick me up on a lot of afternoons when I ran out of energy before I ran out of work.
This is no lightweight coffee drink either, I do sometimes use 1/2 cup of strong leftover coffee, but I usually use a full 2 teaspoons of my instant espresso.
That will be a little strong for some, but make it your own with your favorite espresso or cold brew, etc.

Mock Cinnamon Dolce Latte
Ingredients
- 1/2 cup hot/boiling water (to dissolve coffee and protein powder)
- 2-3 teaspoons instant coffee (I use instant espresso - I get mine at Kroger)
- (OR 1/2 cup your favorite strong coffee-I sometimes save mine from the morning while it's fresh but reheat it)
- *2 tablespoons Pristine Whey Protein or other on plan, plain whey protein (blend in well) or 1 1/2 tablespoon collagen
- 1 cup unsweetened vanilla almond milk
- 1/4 teaspoon caramel flavoring (I used Watkins from Wal-Mart)
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon extract (I used McCormick's)
- 1 1/2 Tablespoons Gentle Sweet or 3 teaspoons Pyure organic sweetener or truvia (Pyure is available at Wal-Mart)
- 1 or 2 tablespoons heavy cream (depends on how hungry I am 🙂 it tastes good both ways OR replace the heavy cream for 2 tablespoons Half and Half for an FP (when used as a snack with protein added and no other fat source
- Ice cubes to thoroughly chill this drink
Instructions
Dissolve the espresso or coffee granules plus the protein powder in the hot water in the bottom of a quart jar. (Quart jars are made to take the heat as long as the jars are not cold.) Whisk well! Then add in the almond milk (I like the vanilla unsweetened, but original should work too). Add in the extracts, cream and ice to chill!
Notes
- *Directions for making a Cinnamon/Caramel Latte Syrup
- (serves 4)
- 1 cup water --heated to boiling and removed from the heat
- Whisk into hot mixture:
- 1/2 cup Gentle Sweet (or 1/4 cup Truvia)
- 1/8 teaspoon xanthan gum
- 1 teaspoon caramel flavoring (I use Watkins brand from Wal-Mart)
- 1 teaspoon vanilla extract (I like to use a high quality for the syrups)
- 1 teaspoon cinnamon extract (McCormick makes a good one - extract not flavoring)
- 1 pinch of salt ***super important don't leave it out***
Continue whisking until all is thoroughly mixed and store in a jar in the fridge. Measure out 1/4 cup of this syrup for each drink in the recipe above. This syrup replaces the sweetener and flavorings in the latte recipe and makes quick work of making these warm, refreshing coffee drink whenever you want one! 🙂

Hi Christine! Thanks for stopping by and my daughter bought that glass for me at a Starbucks in San Antonio. She went back to find another one and they were sold out but you might can find them online. They are pretty good at keeping an even temperature because the glass is so thick but they do not leave a lot of condensation behind.

Hi Sarah! Yes you can but there will be a graininess to it that I don’t care for normally, although I’ve gradually gotten used to it so give it a try.
