Oven Roasted Bacon and Jalapeños
Here’s my method for an easy way of oven roasting bacon and jalapeños at the same time.
The bacon and pepper can be done ahead and used whenever and however you wish. Baked bacon is not only easier to prepare, but the flavor is so much better than the stovetop cooked variety. And while you’re at it just toss some jalapeno in and watch the incredible flavor happen.
This is a really good bake ahead dish to keep on hand to give all sorts of dishes lot more flavor.
I bake 8-12 oz. of thick cut bacon in a 15 x 11 pan at 350 degrees (see top left photo) for 30 minutes and it looks like the top right photo.
Arrange however many jalapeno (I’ve also used serano -super hot though and poblano peppers too) you’d like around the bacon so they will have access to the bacon’s grease and flavor.
Then I turn the oven up to 425 degrees and bake for another 15 minutes and it will look like the bottom left photo once it has been drained of grease.
NOW you can store this for later and chop it up and put it in jalapeño/bacon cheese (instead of pimentos). Makes a great BJT too! Or you can dole it out a little at a time in soups etc.
