A Root Beer Shake that is rich and creamy; sweet and fizzy plus sugar-free and low carb? If you miss root beer floats then this smoothie is for you!
I am a true blue root beer fan-addict. It was the very hardest thing to give up when I started this diet. Then I found a blog that had a post for a Root Beer Smoothie and enjoyed it very much…but something was missing. So I started tweaking and then I tweaked some more until I finally devised a Sugar-Free Root Beer Shake that is so good I will literally NEVER miss my Barq’s root beer float again. It’s crazy I know but it is the honest truth! If you’re a serious root beer lover like myself be sure you give this drink a try!

Ingredients
1 cup unsweetened almond milk
3 tablespoons high quality cottage cheese (I use Daisy brand in my smoothies)
2 tablespoons heavy whipping cream
1/2 teaspoon root beer flavoring (I use Watkins brand from Wal-Mart and love it)
2-3 tablespoons Gentle Sweetener 1-3 tablespoons Truvia or Pyure
(either of these should work great)
Optional 1/4 tsp molasses (gives a creamy flavor and a little more Southern Root Beer umph!) On plan in tiny amounts
14 ice cubes
1/2 scoop Pristine Whey Protein THM whey protein powder (or other on plan protein powder)
Super fizzy mineral water or other carbonated water- the brand I used is in the picture below.
Instructions
Put all ingredients except the mineral water into a high-powered blender and blend.
Pour the shake into glasses filled 3/4 full and carefully top the drink off(not all the way) with the mineral water. Doesn't take much for a really fizzy reaction.

This sounds wonderful. I too am a HUGE Root Beer fan. Currently, due to some health issues, I am not supposed to have anything too cold but I want to try this anyway. Will it mess things up too much if I make it either with out the ice altogether or just a smaller amount of ice?
Hi Katherine when we made it and took the pictures we poured it into the smaller cups, as shown, and the drinks just sat there on the porch at room temperature for maybe 15-25 minutes. By the time we drank them they were just slightly chilled and my daughter who has a problem with cold on her teeth was not bothered with it while my 3 year old grand daughter chugged it down. I would just make it as shown though so that the ratios of water/ice to flavorings don’t get out of sync. Hope this helps and you get to enjoy a yummy, sugar free, root beer drink soon! 🙂
I only have flavored seltzer water:lemon and lime. Would one of them work? I finally got the root beer extract and was excited to try it tomorrow. I didn’t realize seltzer was needed.
Hi Diane! I’m thinking that lemon and lime would not work with the root beer but you might want to try this smoothie without the root beer extract for a sprite float! YUM and let me know how it turns out. 🙂 <3

It’s a root beer flavored smoothie without the seltzer/mineral water. Not so much like a float.
Do you mean teaspoons of the sweetener?
Hi, Aleah! Just sweeten it to your taste, that is just a suggestion. This drink is supposed to be reminiscent of the really sweet floats so I did add quite a bit. 3 tablespoons is pretty typical for these smoothies and this one should be just a little sweeter due to no fruit.
