Reconciling the flavors of chocolate and stevia-based sweeteners has been my pet project for almost 4 years and it has now pretty much evolved into something of an art form in the Trim Healthy Mama community. The following recipes were originally formulated using Lily’s sugar-free chocolate baking chips but they are expensive through Amazon. I was able to get them through my local natural store at half the price shown in the link.

Please remember! The flavors of these dark sugar-free chocolate chips are much more concentrated than the sugary type so whether melting them to make deliciously textured chocolate shells or adding them into recipes a little will go a long way.

Chocolate Covered Cheesecake Bites – S, Low Carb is the recipe that started my sugar free chocolate chip craze. Originally posted back in 2014 because I have always loved cheesecake bites and every sugar free cheesecake bite recipe I could find on Pinterest was made with skinny chocolate.
Skinny chocolate certainly deserves a place of honor in a sugar free diet, but I wanted to get closer to the cheesecake bites that I’d enjoyed so much in the past. So I developed this chocolate shell made from some wonderful sugar free chocolate chips with extra sweeteners and oils added and wow! It surpassed all that I could have imagined.
Texas Toffee Bars – S, Low Carb was converted from a recipe that was an entry in a local dessert competition which I’d kept around and intended to make for years. One evening my husband really wanted something chocolaty sweet and so I remembered this recipe and used the sugar free chocolate shell recipe (from the cheesecake bites) to convert it in one try.
My husband, who is not strictly sugar free, always insists that these bars are one of his all-time favorite desserts. Add that to the perk that you can easily double this recipe and store it in the freezer for a long time or take it to gatherings and this one is definitely a winner! Good straight from the fridge and absolutely wonderful at room temp.
I went on to use the wonderful cookie crust from these dessert bars as the basis for this next post. Do not make this one when you are home alone because you might hurt yourself… trust me on this one! 😉
Chocolate Covered Strawberry Truffle Pizza – S, Low Carb is a naturally photogenic recipe but let me assure you that this one is even yummier than it looks.
The joy that this dessert brings to the whole family every single time I make it is easily equal to the original sugary strawberry truffle pizza. That one was so good that we entered it in a dessert contest when the kids were younger.
Wondering how I can claim that these recipes will taste very close to their sugary counterparts? I use Gentle Sweet sweetener and it is hands down the best sugar free sweetener available for purchase anywhere. Chocolate Candies and Fudges made from Melted Chocolate Chips in the Microwave!
When I decided to remake some of our favorite fast fudge recipes I started with Five Minute Microwave Walnut Fudge – S, Low Carb and wow was it a hit! It’s a good tasting fudge that you can whip up in 5 minutes using Trim Healthy Mama approved, low carb ingredients? That’s like…. faster than a trip to the store to buy junk!
Five Minute Thin Mint Fudge – S, Low Carb soon followed and it is also a much-loved addition to the peppermint mocha season or anytime, really. 🙂
Five Minute Milk Chocolate Fudgey Bars – S, Low Carb is a real departure from the other two fudge type recipes. The reason for this is that instead of basing it on a more condensed milk type recipe I moved toward a buttery caramel base by making this quick microwave caramel sauce and adding chocolate chips!
These aren’t as room temp friendly as the other two but they are a decadent delight. This dish can also be poured into little muffin tins for cute little desserts. (below)
This simple, dairy free Chocolate Candy Assortment – S is not one of my most popular recipes but for me, it might be one of the most important. I’ve never been a dark chocolate fan in the first place so finding a way to lighten it up, without dairy, has been an ongoing search for me and this recipe finally helped me accomplish this goal.
Adding the extra cocoa butter is the trick that makes this a delicious, satisfying and versatile chocolate that can be used as a basis for many more recipes to come.
I remember thinking once that I would never be able to stay on any diet long term, because I loved fudge brownies too much, and especially, brownie batter! This Fudge Brownie Protein Batter (Single Serve) – S, Low Carb has been my go-to quick-fix chocolate recipe from the first bite! It’s so protein packed that it will easily see you through for hours and is a very satisfying and easy to prepare chocolate treat!
