When I first started this diet a few years back I kept seeing these incredible Pinterest images of dishes that they were being billed as low carb but, looked nothing of the sort. I thought someone must be playing a cruel joke. I know rich decadent carb-loaded bread when I see it and I was definitely getting an eyeful with that trick photography! So one day I clicked on one…I don’t even remember which one but I do know one thing, I was totally intrigued! My fascination for these type recipes goes on to this day and is the inspiration for this post containing some of my favorite THM blogger’s links as they share some of their favorite bread recipes from 2016 in this first ever THM Friendly Mozzarella Bread Roundup!
Although sites abound with these types of bread and most link over to wherever their particular inspiration for the dish they are posting originated; I really wanted to try to trace this post all the way back to the absolute genius that discovered this wonderful dough and made all these dishes possible. As far back as I have been able to go is the Fathead Pizza Dough so kudos to the original Fathead and what a great service was done there.
After that the pizza dough was published, the improvements and adjustments for different fillings and flavorings began and one of my favorites is the stromboli dough by Up Late Anyway and it is really good to use for desserts as it is a more delicate dough.

In February of last year, I first posted my mozzarella dough flatbread as a type of copycat for Starbucks Tomato & Spinach Panini because I had once enjoyed these type sandwiches so much. Next, I published my favorite sandwich modeled after Schlotzsky’s California Flatbread Sandwich and this one made two sandwiches. I linked over to the particular version of the bread that I had adapted my recipe from, which was the bagel dog bread.
The flatbreads are super easy to make because you mix up the dough and drop it on the parchment paper, cover with another sheet of parchment paper and roll it out into a flat bread. I rolled mine on parchment on the back of a baking sheet and just baked it right on the pan, Easy-Peazy!
I wanted to post the bagel bread as an even more, THM friendly version by subbing in the THM baking blend for the almond flour (as shown in the flatbread posts) and leaving out all that xanthan gum and it worked! I discovered a much more bread like and more satisfying dough with this substitution and I have tried it on other versions of the dough also and it works perfectly everytime.
