Place the chocolate chips, cream, milk and sweetener together in a bowl (I used a 4 cup glass measuring cup) and microwave on high for 1 minute then remove and whisk.
Return the fudge mixture to the oven for another minute and cook on high for another minute.
Remove and stir in the nuts, pour into the prepared pan sprinkle remaining nuts on top if desired and chill well.I cut my 3x7 inch bar into 12 pieces and really two of those small pieces are so filling and satisfying... really one of all I needed :)
Notes: I have never timed the chill time, I always leave it a few hours, but that might not even be necessary. It should be sliceable though and hold together very well as shown in the pictures and remain totally stable at room temperature once it's chilled. Avoid using the sweeteners with a high stevia concentration in this recipe as stevia and chocolate can get bitter very easily. When I tried using my standard pinch of salt in the chocolate mix it seized up so I would not suggest that you do that. Doubling the amount of sweetener if using one that measures like sugar (as in the case of Swerve might affect the texture of this fudge). So if using Swerve just use the same amount of it as the Gentle Sweet or Erythritol/xylitol and add 1/8th tsp high quality stevia. I only recommend THM or KAL organic stevia.
