Low Carb Lemon Blueberry Poke Cake THM S.
So, I’m minding my own business the other day and along through my Fb feed comes this delicious looking Lemon Cake from over at Delish.
As I watched the video I decided three things:
I couldn’t let myself eat the sugary version of that cake.
I had to have one even though I couldn’t find a low carb version anywhere.
A sugar-free version would have to be created!
Done, and I am so in L O V E with this cake!
The combination of biting into an authentic tasting yellow cake, followed by the flavorful bite back of tart blueberries and then that sweet cream buttercream frosting… Oh, my word!

THM Baking Blend and THM Gentle Sweet is a team that’s hard to beat, both nutritionally and taste/texture wise! But be aware of the following:
This Baking Blend is gluten free but not grain free because of the oat fiber (outer husk of the oat grain that is pretty much all fiber). THM Gentle Sweet is so authentically sugary sweet because it contains xylitol and high-quality stevia.
BUT xylitol is dangerous to pets so if yours have access to your treats be sure and use the Xylitol Free Gentle Sweet (the taste and texture are not quite spot on but still a great product.

Lemon Blueberry Poke Cake THM S Low Carb combines a tasty yellow cake, with flavorful tart blueberries topped with a sweet cream buttercream frosting. For the cake: Preheat oven to 350°. Grease an 8x8 glass dish (or equivalent size) with cooking spray. Make blueberry sauce: Make frosting: In a large mixer bowl, beat the butter and cream cheese. Add powdered sweetener, lemon zest and juice and beat until it's all smooth and fluffy. Using the round end of a wooden spoon, poke holes all over cooled cake then pour your cooled blueberry mixture on top. Carefully spread the frosting on top then garnish cake with more blueberries. *Sweetener Sub: 1/4 cup Pyure Or 1 cup Swerve Sweetener *For baking blend sub 1/3 cup almond flour + 1/3 cup coconut flour + 1/3 cup golden flax meal *This is a nice sweet cake if you use the high quality Gentle Sweet Sweetener and don't make a DIY using a less sweet version of stevia. If you'd like to make it less sweet just reduce the sweetener in the cake and the frosting to 1/3 cup instead of 1/2 cup. Blueberries and lemon! MMmmmm… As I do with all the other THM cake recipes I’ve made, I plan to make this into cupcakes! I’m thinking this recipe will convert to nine cupcakes? Thoughts? Thank you so much for coming up with delicious healthy recipes for all us Mamas and families!
